MURINGA ELA PORIYAL / DRUMSTICK LEAVES STIR FRY


Ingredients :
Muringa Ela/Drumstick Leaves - 1 Bunch
Mustard Seeds - A little
Urad Dal/Black gram (split) - 1/2 Tbsp
Whole Red Chili - 1
Uncooked Rice - 1 Tbsp
Curry Leaves - A Few

Grind Together :
Grated Coconut - 1 Tbsp
Garlic - 4-6 Flakes
Salt - Little
Chili Powder - 1/2 Tbsp
Just till the garlic break and all the ingredients get mixed well.

Method :
1) Remove the leaves from the branches,soak in water for some time.Wash well,squeeze and drain out all the water and keep aside.
2) In a pan,add 1 Tbsp oil,add mustard,after it splutters,add the urad Dal,whole red chili(cut in to 2-3 pieces) and rice.
3) Fry well till the rice pops up and becomes golden in colour,add the curry leaves and fry for a minute.
4) Add the drained leaves,ground mixture and a pinch of salt.Mix well and cover and cook.Do not add any water to it.In between keep stirring and when dry transfer it to a bowl.Serve with hot rice and Dal.

Its been ages since I had drumstick leaves. I love it on adai. This curry could go well with roti.

Suganya,even i love drumstick leaves and this poriyal with rice.i prepare often.but never tried in adai.Post that in ur blog,let me try that one day:-)

Yah Sandeepa,we get it in Dallas.We get almost all the veg's in indian stores.Lucky to be here,touch wood.:-)

Hi Viji, I have not seen drumstick leaves here in New England, but would sure like to try this! You have some really nice recipes here... banana stir fry looks great too :)

Thanks Linda.I love this drumstick leaves stir fry.When I was small,my mom used to tell me,its good for growing childeren,good for brain development etc etc.Just b'coz of that I started to eat this and now its one of my fav dish.DO try both the dihses u liked and give me the feed back.
